Join the South Carolina Aquarium's Sustainable Seafood Initiative and The Culinary Institute of Charleston for a Lowcountry Seafood Supper, Tuesday, June 16, 2009, beginning at 6:30 p.m. at 181 Palmer Restaurant located on Trident Technical College's Palmer Campus. Chef instructors and students from The Culinary Institute will team up with guest chefs from three of the area's finest restaurants to present a delicious selection of sustainable seafood and the South Carolina Aquarium will help you learn how your seafood choices today can ensure healthy fish for the future.

Students of The Culinary Institute will assist in the kitchen and serve in the dining room. The evening will begin with champagne and passed hors d'oeuvres.
• Chef Scott Stefanelli of 181 Palmer will present the first course, blue crab and mascarpone ravioli with fava beans, spring onion, and preserved lemon.
• Chef Frank McMahon of Hank's Seafood will offer the second course of seared yellowfin tuna, yellow gazpacho, roasted corn, and pickled okra.
• The third course will feature Chef James Clark of Waterscapes at the Marina Inn, Grande Dunes with sautéed triggerfish, sweet peas, country ham, wood-grilled shrimp, and Vidalia onion relish.
• Chef Robert Wysong of the Sanctuary at the Kiawah Island Golf Resort will present the fourth course, roasted swordfish with lobster sauce, heirloom potatoes, and early summer vegetables.
• The dinner will conclude with a special dessert by Chef Jeff Alexander of The Culinary Institute of Charleston.
Each of the five courses will be paired with wine. Seating is limited and reservations are required; $65.00 per person inclusive of tax and gratuity. The Culinary Institute of Charleston will donate a portion of the proceeds to the South Carolina Aquarium. 181 Palmer Restaurant is located at Trident Technical College's Palmer Campus at 66 Columbus St. in downtown Charleston (near the foot of the Ravenel Bridge).
