-Crispy Veal Sweetbread with Pancetta, Tomato, Turnips and a Creamed Claret

Third Course:
-Venison Chop, Dry-Aged Brewed Short Rib, Mushrooms en Croute, Rainbow Carrot and Green Herb Puree with a Natural Reduction
-Caymus Cabernet Sauvignon, Napa 15

Dessert:
-Triple Chocolates, Hazelnut Chiffon and Passion Fruit
-Trefethen Late Harvest Riesling, Napa 13
