MAKING WAVES: FISH RESTAURANT IN DOWNTOWN CHARLESTON WELCOMES NEW EXECUTIVE CHEF, NICO ROMO
Fish restaurant at 442 King Street in downtown Charleston has recently undergone an impressive transformation, both in menu and the talent behind the menu. This May, the restaurant welcomed new Executive Chef, Nico Romo, a Lyon, France, native who brings over 13 years of culinary experience to the position. Romo has been instrumental in updating the Fish lunch and dinner menus, infusing his love of regional French cooking while maintaining the Asian flair and Lowcountry favorites.
Romo was recruited by Patrick Properties, LLC, which owns Fish restaurant, the William Aiken House and the American Theater, in May 2007. As Executive Chef of one of Charleston’s most respected restaurants, Romo looks forward to using fresh, local ingredients to create simple, innovative dishes. Items on the new Fish menu include Shrimp Wonton Soup with stuffed fried dumplings and plum sauce; Goat Cheese Spring Roll stuffed with dried fruit; Red Snapper with kasu saki, fried rice noodles, sugar snap peas and a green curry foam; and Kona Kampachi with parsnip puree, kumquats and mustard miso sauce. Romo holds a deep passion for cooking and for educating people about new foods and flavors, and looks forward to putting down roots in Charleston.
After graduating at the age of 15 from Helene Boucher Culinary Art School in Venissieux, France, Romo honed his skills through internships for two renowned Relais & Chateaux properties, La Pyramide in Vienne, France, and Restaurant Pierre Orsi in Lyon. Romo moved to the US in 1999 to work as Sous Chef at Chez Philippe in the Peabody Hotel in Memphis, TN. Here Romo had the opportunity to attend and cook for two James Beard house dinners as well as manage the kitchen of the four-star, nationally acclaimed restaurant. Following his tenure at the Peabody Hotel, Romo worked at Cielo in Memphis, and was recruited soon after to work as Sous Chef at The Café at The Ritz-Carlton Buckhead in Atlanta, GA. Romo went on to later become Executive Chef at The Café at East Andrews in Buckhead and The Milton House in Alpharetta, GA.
Most recently, Romo was recruited to open the third location of the B.E.D. restaurant concepts in downtown Atlanta. Located inside Atlanta’s first luxury, boutique hotel, The Glenn, B.E.D., which has sister properties in New York and Miami, is known to attract celebrities for its contemporary blend of décor, cuisine and style.
