CQ’s To Host First Sustainable Seafood Initiative Dinner In Hilton Head, South Carolina

A five-course meal featuring certified Wild American Shrimp at CQ’s Restaurant.

Join CQ’s, a AAA Three Diamond Award winning restaurant and the South Carolina Aquarium’s Sustainable Seafood Initiative for a lighter new approach on certified Wild American Shrimp with a five course meal on Tuesday August 26, 2008 at 6:30 p.m. Nestled amidst the ancient, moss draped oaks in Harbour Town, CQ's combines great fun, fine dining and a touch of Hilton Head Island history. This dinner is the third of the Sustainable Seafood Initiative’s summer series featuring certified Wild American Shrimp. During the dinner guests will learn about the sustainability of and differences in flavor among species of shrimp harvested in the U.S. Atlantic and Gulf of Mexico. Executive Eric Sayers has designed a stunning menu to compliment the flavor profile of local, South Carolina shrimp.

The evening meal will feature: Pink Grapefruit infused Wild American Shrimp with micro celery and bloody mary semifreddo paired with a Simi Sauvignon Blanc; Wild American Shrimp Bisque “Gazpacho”andcrisp dumpling and pea shoots paired with Estancia Reserve Chardonnay; Semolina Dusted Wild American Shrimp with cauliflower “couscous” and caper beurre noisette paired with Estancia Pinot Noir; a intermezzo of cucumber mint; Roasted Wild American Shrimp and Braised Kobe Short Ribs with Anson Mills creamy polenta, chipotle vinaigrette, lardons and corn cream paired with a Robert Mondavi Merlot and Coconut Blancmange with hazelnuts and berries paired with Inniskillin Vidal Icewine, for dessert.

What is Sustainable Seafood? Sustainable Seafood refers to fish that are caught or farmed with consideration for the long-term viability of individual marine species and for the oceans’ ecological balance as a whole. In other words, sustainable seafood is fish for the future.

What is the Sustainable Seafood Initiative? The Sustainable Seafood Initiative, a conservation program of the South Carolina Aquarium, teaches chefs about sustainable seafood and how the decisions they make today can ensure that we have fish in the future. We also support the use of seafood produced by the U.S. fishing industry, which follows conservation-based regulations that are not often required by other countries. Participating restaurants make every effort to obtain seafood from sustainable and, whenever possible, domestic and local sources. In addition, they agree to not serve or sell Chilean sea bass, orange roughy and imported shark because of concerns regarding the status of these species in the wild. Since its inception in 2002, the Sustainable Seafood Initiative has grown to include more than 60 restaurant partners in Charleston, Beaufort, Hilton Head, the Grand Strand and the Upstate.
