James Beard Foundation's Taste America Dinner - Charleston

A once-in-a-lifetime culinary collaboration among top chefs will kick off Charleston's James Beard Foundation's Taste America® weekend on Friday, November 4, at The Cedar Room in The Cigar Factory.

Titled A Night of Culinary Stars, the exclusive dining event will benefit the James Beard Foundation. The evening will begin with a reception filled with cocktails and hors d'oeuvres from local chefs and restaurateurs, including Jeremiah Bacon (The Macintosh, Charleston), Jill Mathias (Chez Nous, Charleston), Kevin Mitchell (Culinary Institute of Charleston), Ken Vedrinski (Trattoria Lucca, Charleston) and Michelle Weaver (Charleston Grill, Charleston).

Afterwards, guests will be seated for an exceptional dinner prepared by James Beard Award-winning chef and Taste America® All-Star Dan Barber (Blue Hill at Stone Barns, Pocantico Hills, NY) and James Beard Award-winning Local Star chef Sean Brock (Husk, Charleston), who will collaborate to create a unique and unforgettable multi-course menu devoted to the theme of food waste and reuse. As chef Barber outlined in his book, The Third Plate, he is passionate about a new way of eating for the future, ”one that incorporates underutilized crops and cuts of meat in order to support the long-term health of the land” and looks to chefs as pioneers in this cultural shift.

This dinner will celebrate what chefs do every day in their kitchens (and what peasant cooking has done for thousands of years): creating something delicious out of the ignored or uncoveted and inspiring new applications for the overlooked byproducts of our food system.
